London, 27 Feb 2025: Cain International’s The Stage, a mixed-use development in the heart of Shoreditch, is adding The Black Cow, a Middle Eastern steakhouse from Shiri Kraus and Amir Batito to its growing roster of F&B tenants. Set to open on 1 May, the restaurant joins Sushi Revolution, as the development continues to deliver a leading destination for dining and entertainment.
Marking its second location, The Black Cow brings a theatrical twist to the classic steakhouse, drawing inspiration from Broadway, Middle Eastern theatre, and the site’s own Curtain Playhouse heritage. Guests can expect flame-kissed, dry-aged steaks served tableside with signature burning herbs, alongside a menu of shareable small plates. Set to open 1 May, the 2,946 sq ft space will feature The Gallery, a mezzanine dining area overlooking the open kitchen, where spotlights highlight the drama of live-fire cooking.
The Black Cow joins Sushi Revolution, a contemporary Japanese restaurant redefining traditional izakaya dining that opened in 2024. Founded by industry veterans Tom Blackshaw and Aidan Bryan, the concept blends expertly crafted sushi with a design-forward space featuring shou sugi ban wood walls, kintsugi porcelain tables, and a reclaimed wood sushi bar.
Situated on the historic site of Shakespeare’s Curtain Playhouse, The Stage is home to a dynamic mix of residential, office, retail, and leisure spaces. It features a 37-storey residential tower with 412 premium apartments, a luxury sky terrace, and a state-of-the-art underground arcade, alongside 211,000 sq ft of fully let office space.
The latest F&B signings were secured by Cain International, alongside joint venture partners McCourt Partners, Galliard Homes, Vanke, and Investec, with Cushman & Wakefield and CFC Commercial advising on the lettings.
Georgia Perry-Hilsdon, Vice President at Cain International, said: “These new additions will enrich the leisure and dining offering at The Stage, solidifying it as a premier destination in the heart of London. The Stage continues to be a standout location where Shoreditch meets the city, where independent brands are enjoyed by residents, neighbours and the area’s workers alike.”
Shiri Kraus, Co-Founder of The Black Cow says, “Things that are tongue in cheek always bring me joy, you can see that across our menu with the play on the American steakhouse with Middle Eastern influences. This opening is something that fits so well into that concept, we love that this site is steeped in history having been one of Shakespeare’s theatres, and we’re excited to bring that out in the restaurant”.
Amir Batito, Co-Founder of The Black Cow adds, “My passion is steak and sourcing the best beef the UK has to offer. We work with the finest British produce, and The Black Cow at The Stage takes it up a notch with our own dry ageing – it’s all in the theatre, from watching the steaks be carved, cooked and then served and I’m excited to bring that to life. The Stage is a fantastic development, and we’re excited to be a part of the vision transforming this historic site into a vibrant destination.”
Aidan Bryan, Director of Operations at Sushi Revolution said: “At Sushi Revolution, we’ve been pushing the boundaries of traditional Japanese dining while staying true to the craftsmanship behind it. Our new location at The Stage perfectly blends culture, artistry, and sustainability, and we’re excited to have brought our vision of contemporary izakaya dining to this vibrant, historic site. The energy of Shoreditch offers the ideal backdrop for what we do — a place where tradition meets innovation, and we’re proud to continue sharing that with our guests.”
